Banana Muffins

Whenever I see older bananas on sale in the store I buy 3 to make my banana bread. It is easy to make and makes a delicious snack.

Sometimes, when I don’t want to wait the hour for the banana bread to bake, I make muffins instead as they only take 20-25 minutes.

If no food processor is available, mix sugar, margarine and eggS until fluffy. Then add baking soda, flour and salt and mix. Crush the bananas and add last.

  • Preheat oven to 350°F for Banana Bread
  • Preheat oven to 375°F for Banana Muffins

½-¾ cup white sugar

3 Tbsp butter or margarine

2 eggs

  • Place ingredients in food processor and mix
3 ripe bananas
  • Break into pieces and add to running food processor and mix well

1 tsp baking soda

½ tps salt

1½ cups flour

  • Pulse on off until just mixed
for Banana Bread
  • Line a rectangular bread pan with parchment paper
  • pour batter in it
  • bake for 1 hour at 350°F
for Banana Muffins
  • Line 2 muffin pans with muffin liners
  • divide batter into all the muffin cups
  • bake for 20-25 minutes at 375°F
